Chicken soup is extremely beneficial to our bodies. Historically, the naturally hearty meal became a go-to treatment for thousands of years, commonly used as a solution for those experiencing symptoms of a cold. Or in cases when you just need a hearty meal that will warm up your body, chicken soup will always do the trick.
The recipe contains common ingredients like chopped bits of carrots, celery, and onion; all of which are fantastic sources of both vitamin C and K and generally are easier for the younger, picky eaters in the family to stomach. There is no secret as to why chicken soup is so beloved amongst so many people. Its ability to heal ailments and remind you of a more wholesome time as a kid truly goes unmatched. Oh yeah, and another thing, it tastes amazing.
After learning of a hearty chicken soup recipe by Kris Jenner being shared online, I couldn’t help but wonder how the matriarch of the Kardashian family would go about preparing such a classic recipe. Plus, I have been itching to find another excuse to bust out my new Our Place Perfect Pot. Here’s how to make the recipe.
How to Make Kris Jenner’s Hearty Chicken Soup
Start by removing the meat from each of the rotisserie chickens. Place the bones in a large pot with chopped carrots and celery, as well as a single quartered yellow onion. Add about 3 quarts of water and bring everything to a boil before covering and letting it simmer for 2 hours.
When ready, remove the chicken bones by draining the stock, however, keep the stock as it will now be the broth for the soup. Using the same pot to combine the chicken meat, chopped carrots, scallions, zucchini, celery, broccoli, and squash with the broth, and then add chili powder, seasoning salt, and cumin. Stir everything together, bring to a boil, and reduce the heat to low and simmer for another hour.
During the last 10 minutes of cooking, stir in 1/4 cup of barley; and during the last 6-7 minutes, add 1 cup of pastina pasta. Season to taste and garnish with more sliced shallots. Serve hot and enjoy!
My Honest Opinion of Kris Jenner’s Hearty Chicken Soup
Personally, I’m a huge fan of having a ton of vegetables complement my favorite soups. But little did I know that the “hearty” in this recipe was clearly referring to the straight-up onslaught of delicious vegetables that were put on display within every bite. I did, however, find myself adjusting the seasoning as I went, as I just couldn’t stop myself from taking multiple taste tests throughout the whole process. This soup is truly a treat and I applaud Kris Jenner for perfecting such a wonderful childhood staple.
I loved the hint of spice that the chili powder packed into the flavor profile of this recipe, and it really was not at all overpowering unless you really wanted to take it there. The soft and tender addition of pastina pasta and pearled barley tied everything together perfectly, adding a much needed contrast to the already vegetable and meat-heavy recipe. I will certainly be keeping this rendition of one of the most wholesome soups you can make in my rotation this winter, because the temperature has already dropped enough for me to need chicken soup on demand at all times.

Substitute with your favorite vegetables. The beauty of a good chicken soup is when it is full of ingredients you absolutely adore. Have fun with this recipe and try different alternatives to some of these classic vegetables. Swap the broccoli for cauliflower, or substitute the celery for some good crispy green beans.
