Tangerine Beef With Snow Peas

Ingredients

  • 12 flank steak, trimmed

  • 1/3 fresh tangerine juice

  • 1 1/2 oyster sauce

  • 1 1/2 reduced-sodium soy sauce

  • 1 dry sherry

  • 2 minced fresh ginger

  • 2 cloves garlic, minced

  • 1 cornstarch

  • 1 sriracha or other hot sauce

  • Freshly ground black pepper

  • 6 canola oil

  • 8 snow peas, trimmed

  • 3 scallions, chopped

  • 1 slivered tangerine zest

  • Steamed jasmine rice, for serving, optional

Directions

  1. Add remaining 2 tsp. oil to skillet; swirl to coat. Add snow peas and stir-fry for 1 minute. Add scallions; stir-fry for 30 seconds. Add sauce, reduce heat to medium and simmer for 1 minute. Return steak to skillet and cook until just warmed through, about 1 minute. Stir in zest. Serve with rice, if desired.
