Tangerine Beef With Snow Peas

Ingredients
12 flank steak, trimmed
1/3 fresh tangerine juice
1 1/2 oyster sauce
1 1/2 reduced-sodium soy sauce
1 dry sherry
2 minced fresh ginger
2 cloves garlic, minced
1 cornstarch
1 sriracha or other hot sauce
Freshly ground black pepper
6 canola oil
8 snow peas, trimmed
3 scallions, chopped
1 slivered tangerine zest
Steamed jasmine rice, for serving, optional

Directions
Add remaining 2 tsp. oil to skillet; swirl to coat. Add snow peas and stir-fry for 1 minute. Add scallions; stir-fry for 30 seconds. Add sauce, reduce heat to medium and simmer for 1 minute. Return steak to skillet and cook until just warmed through, about 1 minute. Stir in zest. Serve with rice, if desired.
