During the holiday season, we're inundated with Christmas cookies. At first, I'm super excited, but they get old after awhile. It's always nice to mix it up and get a new dessert into the mix, and this sparkling cranberry cheesecake will definitely do the trick. It's one of my favorite cheesecakes EVER, plus it's pretty as a picture.
The base of this cheesecake is super classic: graham cracker crust and a cream cheese filling flecked with orange zest. Not only is it super cute, it packs a major flavor punch that I find totally necessary in cheesecake. You need something to cut all that creaminess! Topped with slightly candied cranberries, the flavors are perfectly balanced.
Word to the wise: if you're making this for an event, use a water bath!!! I know it's like, sooo annoying, but it guarantees a perfectly smooth top every time. This cheesecake is a looker, no cracks allowed! (Ok, if you do have a crack, you could just cover it in cranberries.) Regardless, this one's a classic. Give it a shot and it might just end up being a constant on your holiday dessert table.
