This Restaurant Literally Pours An Entire Italian Feast Right On The Table
Ever been so hungry you eat an entire table's worth of food? (Me everyday.) At Fortina Pizza, you can do exactly that. Contrary to their name, they might be best known for their Polenta Table.
It's an ancient Italian tradition called "polenta alla spianatora," or polenta spread flat on a table or wooden plank. The table we used was made out of wood so no problem there. This communal, family-style meal is meant to be eaten right off the table. That's mostly because plates didn't exist when this was first made. Fortina's owner and executive chef, Christian Petroni, experienced this tradition for the first time in Italy and was so inspired by the meal, he decided to bring it back to his restaurant in the states.
Polenta is made from cornmeal, which is course flour made from corn. To make the polenta at Fortina, Chef Petroni mixes it with cheese and cooks it "low and slow," i.e. on a low temperature for at least a couple of hours. Then, it's poured directly onto your table and topped with meatballs, pork braciole, roasted bone marrow, basil, spicy marinara, black truffle sauce, olive oil, and cheese. Don't worry: If you don't eat meat, you can order a vegetarian version!
