Ree Drummond's Secret Ingredient for the Fluffiest Pancakes Ever
Pancakes may be a breakfast staple, but making them into airy, buoyant delights is no easy feat. Unless you're Ree Drummond, that is. As PureWow recently reported after some archival digging, The Pioneer Woman took it upon herself to test many different versions of flapjacks until she reached perfection.
On her blog in 2009, she chronicled the adventures, and her MVP ingredient may surprise you: Cake flour. "CAKE FLOUR," Drummond writes in Caps Lock, with a parenthetical stating "essential ingredient," before ticking off the expected list of sugar, baking powder, salt, eggs, milk, vanilla, and butter.
"Start by throwing 3 cups PLUS 2 tablespoons cake flour into a mixing bowl. You MUST include the extra two tablespoons of flour or your life will quickly spiral out of control and implode and explode and crumble," Drummond prescribes in her signature tongue-in-cheek style.

While most pancakes use all-purpose flour, Drummond uses cake flour to imbue each pancake in your stack with that fluffy quality we crave. Brilliant, huh? Well, it looks like we now have that excuse to invite a few friends over for an impromptu brunch this weekend.
