This Recipe Makes Cookies Exactly Like The Carrot Cake Sandwiches From Disney
People have been trying to recreate iconic foods from the Disney Parks for years, and now some official recipes are coming out for people to try at home. The churros, grilled cheese, and beignets are all easy to make at home, and now Disney Food Blog made a copycat recipe for the carrot cake cookie sandwiches that used to be sold at the Writer's Stop in Hollywood Studios.

The Writer's Stop no longer exists in Hollywood Studios, but similar carrot cake cookies are sold at the Trolley Car Cafe. Now, while you're at home trying out new recipes, this adaptation of the carrot cake cookies from the park is an easy treat to make.

To recreate these cookies, you'll need a box of carrot cake mix (they used Duncan Hines), water, vegetable oil, eggs, cream cheese, butter, powdered sugar, crushed pineapple, and vanilla extract. You should follow the instructions on the cake mix box and rather than using a cake pan, spoon cookie-sized amounts of the batter onto a prepared cookie sheet.
Then, for the sandwich filling, you'll mix butter, powdered sugar, cream cheese, and the crushed pineapple together. This will get you a creamy and fruity frosting that you'll lather on a cookie and top with another cookie to make a sandwich. Using the cake batter for the cookies makes it moist, soft, and a little chewy so it's easy to eat with your hands.
