PSA! Mac And Cheese Pierogies Exist
These aren't your Eastern European baba's pierogies. Though they do, ironically enough, come from a little place in Brooklyn called Baba's Pierogies.
Co-owners Helena Fabiankovic and Bob Garnder explain that while many items on her restaurant's menu are based on her grandmother's OG recipe (like the sauerkraut), the mac and cheese pierogies are not. Like many brilliant (and over-the-top) food ideas, these came to be after a drunken night at the local bar. Rest assured, you don't need to be drunk to enjoy them.
If you're skeptical that this is another case of a restaurant trying to make waves on Instagram, I hear you and promise you it's not. The mac and cheese is the creamy stovetop kind that will remind you a little bit of the stuff from the blue box ... but only for a second because it's homemade and better. The American cheese also makes it ridiculously creamy. In other words, trendiness aside, the pierogies are really really good.
And here they come fried and boiled - the choice is yours. If you go the crispy route, you'll get some sour cream for dipping; ask for boiled, and they'll come tossed in brown butter. In both case scenerios, you can (and should) order them with crispy bacon and caramelized onions (that have been cooked down for 10+ hours!).
My suggestion? Make the trip to Brooklyn and order a ton. Beyond mac and cheese, they have a big beautiful menu of other crazy pierogies as well as some more traditional varieties. Plus, there's one that's filled with melty chocolate-hazelnut (aka Nutella). Mic drop.
