Unique New York-style pizza combos debut weekly now that Jupiter brewery opened kitchen
A favorite Palm Beach County brewery has expanded its offerings with an in-house kitchen that offers the perfect companion to an ice-cold brew.
When Civil Society Brewing opened its first location in the Abacoa Town Center in 2016, brewers and owners Karl Volstad and Evan Miller focused on offering high-quality, small-batch beer and a lively taproom atmosphere to draw a local crowd.
Beloved for their hazy New England-style IPAs, Volstad and Miller found immediate success with the local and national beer scene. So much so, the duo expanded in 2019, opening a second production facility and taproom in West Palm Beach.

Now, along with an ever-increasing demand for their suds, Volstad tells the Palm Beach Post he's expanding once again — this time with a menu of from-scratch fare, a decision that felt like a natural next step for his north county brewery.
"We were always thinking about ways we could make this space better, and what that would look like. Adding a kitchen here just felt like the right evolution for the Jupiter space," Volstad said.
Jupiter's Civil Society Brewing now serving brick-oven pizza
In December 2023, Civil Society officially welcomed Eat Social — a name inspired by the brewery's "drink civilized" slogan — at the Jupiter location. The idea: give guests a convenient option to pair their beer with brick-oven pizza.
"We wanted something easy and fun, went well with beer, and was different from anything else in Abacoa," says Volstad. "And who doesn't love pizza?"
To execute their vision, Volstad and Miller consulted with Grace's Fine Foods chef, Bradley Grace, who helped the brewers design an onsite kitchen space and hone the opening menu.
Eat Social chef Robby Ginn — who worked alongside Bread by Johnny owner Johnny VanCora before helming the kitchen at Eat Social — offers his take on New York-style pies alongside starters like oven-baked chicken wings, meatballs, and salads.
Great pizza dough begins with great water
Priced $14-$20 apiece, the short list of personal-sized red and white pies use the brewery's reverse osmosis water treatment system to create a unique water profile. A resulting three-day ferment dough offers the appeal of New York-style thin crust with the heft and chew of a Neapolitan.
Favorites include a pie rife with pepperoni cups and drizzled with hot honey and the blanco featuring a blend of ricotta, mozzarella, and parmesan cheeses topped with arugula and sliced prosciutto.
The simple New York pie is a popular option at happy hour, sold for $10 apiece from 4 to 6 p.m. every Wednesday through Friday. The weekday deal also includes $10 brick oven-roasted wings slathered in the buffalo sauce or garlic parmesan, and served alongside a choice of house-made ranch or bleu cheese dipping sauces.
Each Wednesday, Ginn says he debuts a new pizza special. Available for one week only, the specialty pies often present an unusual riff that recently included Big Mac- and Nashville hot chicken sandwich-inspired toppings.
"My approach to pizza is that it's such a versatile vessel," says Ginn. "I like to make it fun, think outside the box, and get a little creative, and people really seem to love it."
"A lot of work and time goes into our beer. We take a lot of pride with what we have to offer from a brewery perspective, and we wanted to offer a food menu that we could be equally proud of," sums up Volstad.
