Jeanne Muchnick's Best Thing I Ate This Week: Chicken parm at this Westchester restaurant
I may have detractors on this, but for me, the best chicken parm doesn't always come with pasta. The chicken parm at Rosie's Bistro Italiano in Bronxville sits atop spinach — and it's the Best Thing I Ate This Week.
Smothered in a rich housemade tomato sauce, with the perfect amount of melted mozz, it's been made this way since 2005 when the restaurant first opened as a way to accommodate healthier palates.
"Not everyone always wants pasta," said Marco Lojano, who owns the restaurant with Chef Miguel Bravo.
If you do want pasta, however (bring on the parm please!) you've got to try their ever-popular Lasagna Malfatto, ribbon pasta with beef, ricotta, mozzarella and tomato-béchamel as well as anything on their specials list, which often includes squid ink spaghetti tossed with gulf shrimp and baby clams (official name: Seafood Pasta "Notte e Giorno").

Lojano said what makes Rosie's pasta, and honestly everything else, so good is its consistency. That's because the kitchen staff has remained the same since opening, with Chef Bravo, Pasta Chef Jose Mendoza and Sous Chef Manuel Uruchima.
