I don't know about you, but when it comes to baking Christmas cookies, shortbread is always the first on my holiday baking list. From an easy whipped shortbread to a melt-in-your-mouth cut-out cookies, to, yes, a couple of those amazing cookies with a delicate shortbread base. The holidays aren't quite the same without a batch of scrumptious holiday shortbread.

What is shortbread?

Unlike other many other biscuits, shortbread is actually a type of Scottish cookie and it does not contain leavening, such as baking powder or baking soda.  Among holiday cookies, they're some of the easiest and need the least amount of ingredients. Sugar, butter, and flour - even if these are the only  ingredients you have in your kitchen right now, you can still be on your way to make delicious shortbread for a holiday party or Christmas cookie exchange.
