Fall is here and it's all things pumpkin in the Delish kitchen. From brownies to chocolate chip cookies, we just can't get enough of the orange squash. Nothing is more classic than pumpkin pie but sometimes we like to switch things up a bit.
Recently I dabbled in some less than traditional egg rolls and loved the results. This big question is: does pumpkin pie filling work in an egg roll wrapper? The answer: yes! Let's be honest, pie crust is good but fried stuff is better.
To start, make your pumpkin pie mixture. Ours is a simple combination of pumpkin, brown sugar, vanilla, and of course, pumpkin pie spice. Mix that all up with a little bit of cream cheese for some added creaminess, and you've got your filling!
Add a couple dollops of your mixture to your egg roll wrappers and get to rolling! Make sure they're sealed tight with the help of a dab of water - no one wants a pumpkin explosion. Fry until golden on both sides and serve them with caramel if you know what's good for you. ]]>??
