Honey and Goat Cheese-Filled Figs Recipe

Ingredients

  • 1 lb small ripe fresh figs (16 to 20 total depending on size)

  • 1 Tbsp honey, plus additional for drizzling

  • 1?3 cup creamy goat cheese (chèvre), at room temperature

  • Kosher salt and freshly ground black pepper

  • 6 large fresh mint leaves

  • 2 Tbsp coarsely chopped, dry-roasted unsalted hazelnuts

1. Cut off the top ? inch of each fig and use the back of a small spoon to scoop out some of the seeds from each fig (about ? teaspoon each). You are essentially creating small fig “cups.”

2. Transfer the seeds to a small bowl, add the honey, and use a fork to smash the seeds and honey until the mixture is smooth and jammy. Add the goat cheese, a pinch of salt, and several large grinds of black pepper, then stir until well combined and smooth. Coarsely chop four of the mint leaves and fold into the goat cheese mixture.

3. Transfer the filling to a small piping bag or plastic storage bag and cut a small opening on one corner of the bag that is a little larger than ? inch. Pipe the filling into each fig so that the filling comes slightly out of the top.

4. Transfer the stuffed figs to a serving platter, drizzle with additional honey, and sprinkle with the chopped hazelnuts. Coarsely chop the remaining two mint leaves, sprinkle over the stuffed figs along with a couple grinds of additional black pepper, and serve.
