Coolinary 2024: Arnaud’s Restaurant
NEW ORLEANS (WGNO) — August not only brings hot weather, it also brings a New Orleans favorite – Coolinary! Right now, it’s in full swing. Select restaurants will be featuring set menus for special prices all throughout the month of August and half of September.
Arnaud’s, a New Orleans classic, is one of them.
What’s in the blue box on an Algiers Point sidewalk?
Tommy Digiovanni is the executive chef at the French Quarter staple. He describes the restaurant as “grand dame” and “as French Creole as it gets,” also making a nod to it being one of the older traditional pillars of the city. This will mark their 107th year of continuous operation.
WGNO asked him to tell us about the dishes he and his staff will be whipping up for Coolinary.
“Our feature dishes on our Coolinary menu this summer are a seared scallop with avocado cream. We are also having a crab and corn bisque. We are also doing a chilled gulf shrimp with a white remoulade. Those are all of our appetizers,” explained Digiovanni.
“For entrees we are featuring a pan seared 10-ounce center cut pork chop with a peach sauce and we are also doing a panko and parmesan crusted gulf black drum and that has a ratouille napoleon,” said Digiovanni.

“We are also featuring for dessert on our Coolinary menu this year a s’mores entremet. Our entremet is graham cracker crust with smoked chocolate pudding.”
Digiovanni explains this time of year is typically slower for the restaurant industry, so Coolinary is great at getting people in the door and promotes foot traffic.
“You’re going to be in awe when you leave, between the service, the cuisine, we nail it.”
Arnaud’s will be featuring its Coolinary menu for dinner only, $50 per person.
