Monday: Kale and Brussels Sprout Caesar Slaw
PSA: Brussels sprouts can be eaten raw and they’re so delicious that way. Use them in this healthy dish. Is it a kale salad? Is it a Caesar salad? Is it coleslaw? The answer is yes! (Pair it with whatever leftover protein you have on hand, like chicken breast or grilled tofu.)
Tuesday: Vegetable Tagine with Fluffy Couscous
Let's transport ourselves to beautiful Morocco, where the tagine is spicy, the veggies are plentiful and the couscous is fluffy.
Wednesday: Salsa Shakshuka
"Directions: open jar of salsa" is exactly what you'll need this hump day. (We won’t tell if you finish the whole bag of tortilla chips.)
Thursday: Potato and Burrata Pizza
This decadent pizza will look and taste so delicious and homemade that no one will know it's essentially just a bunch of store-bought ingredients layered together. Plus, potatoes on pizza? We're all in.
Friday: Baked Feta with Dill, Caper Berries and Citrus
Saying the sentence "I had a whole block of cheese for dinner" will never be sad again with this fancy feta recipe.
Saturday: Aran Goyoaga’s Ni?oise Salad
This weekend, we're traveling to France—specifically, Nice. We're bringing the traditional potatoes, tuna, egg and green beans…and we're saying oui to the avocado as well, because why not?
