Chipotle Is Testing Cauliflower Rice at Select Locations, So Your Order Just Got Low-Carb
Chipotle took a major step towards healthy offerings last year with its Lifestyle Bowls. The keto, paleo, and Whole30 options made it easier for people following particular meal plans to dine at the fast-casual Mexican food spot. Now there’s a new way to make your meal low-carb, thanks to the Cilantro-Lime Cauliflower Rice.
Beginning on July 15, Chipotle will be testing out the plant-based option in 55 locations in Denver and throughout Wisconsin. The Cilantro-Lime Cauliflower Rice is made with real grilled cauliflower, fresh cilantro, lime juice, and salt, and it’s prepared fresh in-restaurant every day.
“To date, one out of three new menu item requests from Chipotle customers is for Cauliflower Rice,” Chris Brandt, chief marketing officer, said in a press release. “We’ve answered the call from fans and created a better-for-you option that puts a delicious twist on our classic white rice recipe by using the same fresh cilantro and lime ingredients and culinary techniques.”
The grain-free Cauliflower Rice can take the place of white or brown rice in your order, so your Burrito, Burrito Bowl, Salad, or Tacos will be packed with more vegetables and less carbohydrates. The latest menu offering is keto-, paleo-, and Whole30-approved, as well as vegetarian.
Adding the Cilantro-Lime Cauliflower Rice to your order will cost $2, but hey, you’re already adding on the guacamole, right? And don’t we deserve to go all out at Chipotle? Fingers crossed the test period goes well and it’ll make its way across the country.
