Cauliflower Garlic Bread Defies All Logic

I had zero expectations for this bread. No one in the Delish test kitchen did. I thought it'd be just another low-carb cauliflower bread (not that we don't love them), and nothing really like bread. But then I got a text from someone in the kitchen saying, "It looks sooooooo gooood." And then another, "It smells sooooo good." And finally, "IT'S AMAZING!" I was floored. Could cauliflower garlic bread taste as good as the real thing?

The difference between this recipe and all our other (still delicious) cauliflower breads is vast. First of all, there are SIX eggs, which you need to separate. There's also a little bit of almond flour and a lot of baking soda. The eggs make all the difference.
We got the idea from the blog Wholesome Yum, who uses TEN eggs and coconut flour. We were very intrigued by her method of whipping egg whites separately, but we couldn't get ourselves to use almost a dozen yolks in one loaf so we reduced the amount. We also swapped out the coconut flour and switched up the herbs. But the craziest thing we changed was the cheese. There is none! At least not in the bread. All of our previous cauli bread recipes relied heavily on cheese. This doesn't need it. With all the whipped egg whites, the bread rises like real bread! It's not flat like all of past experiences, it's beautifully domed. And sliceable! People were literally screaming with delight as a I cut the bread into thick slices.
So is it as good as garlic bread made with, say, a baguette? Probably not. Texturally, the bread is a little soft and eggy. BUT, it's the best low-carb garlic bread you'll ever have, and while you're eating it, you won't miss bread.
