Cauli Tamale Pie Makes Eating Healthy Suck Way Less

Our classic tamale pie is pretty dang perfect. The cornbread crust gets crispy, and almost caramelized around the edges, the beef ultra-flavorful with all the spices, and there's just the right amount of bubbling cheese on top. In terms of flavor, there's not much to improve. In terms of health, however, we fully recognize that there's room for improvement.

That's where Cauli Tamale Pie comes in. It's the same dish you know and love but with a cauliflower crust instead of cornbread. We know this sounds like blasphemy, but remember when you discovered cauliflower pizza was actually delish? We promise this is even better. Plus, it has two different cheeses; the cornbread base had zero.

The process for making the cauliflower base is similar to making a cauli pizza crust. Steam a bunch of riced cauliflower in the microwave (this helps release moisture so the crust isn't soggy), then mix in some egg, cheddar, monterey jack, dried oregano, and salt. Press the mixture into a cast iron skillet and bake until it's golden and crispy around the edges.

Rest assured, the filling here is almost the same the OG - onion, garlic, ground beef, enchilada sauce, cheese. We simply added some corn and black beans to make each serving a little bit more satisfying, which will hopefully deter you from devouring the whole skillet by yourself. (We wouldn't judge.)
