New Cape Coral pizza restaurant quickly gaining fans
It was a perfect match.
Almost like pepperoni on pizza, you might say.
Aimee and Jeremiah Kuslock met seven years ago when he was a cook and she was working front-of-the-house restaurant jobs, from waiting tables to bartending to hosting and more.
“You name it, I did it,” Aimee said. “Together we make a good team.”
And they’ve teamed up on two area restaurants in the last few years as the owners of Torched in Cape Coral and, more recently, Pine Island Pizza in Bokeelia.
Oh, and as of earlier this month, you can add Pi Theory Pizza in Cape Coral to the list.
Only this one belongs solely to Aimee.
“This one’s my wife’s,” said Jeremiah, who is nearby to assist. “It’s female-owned and operated.”
Aimee, a Cape Coral native who graduated from Cape High, moved around throughout Florida for a bit before settling back here.
“I knew I wanted to own another pizza shop,” Aimee said. “We really like our Pine Island one. This location came up and we love it. I’m in this area all the time.”
Pi Theory Pizza is on Hancock Bridge Parkway, in the former I Ragazzi Pizza spot in Merchants Central Plaza.
“I used to order pizza from (I Ragazzi),” Aimee said. “Some say we have similar pizzas, but we use our own recipes. Jeremiah had plenty of pizza experience from when he owned Big 10 Tavern.”
Pi Theory makes everything homemade, including the dough and sauce for the thin-crust, crispy pizza.
“If someone wants their pizza a little thicker than our usual thin, just say so,” Aimee said. “We are happy to adjust. But we also have a Sicilian pizza which is thick and takes way longer to bake. It has such a nice crust. There’s something for everyone here.”
And while she was a bit nervous about joining Cape Coral’s crowded pizza scene, she was ready.
“I’m pretty confident,” she said. “We’re a very small, hometown restaurant, not a chain or franchise. Once someone tries our pizza, I think they’ll be very impressed.”
Classic and premium pizzas have been best-sellers so far, since “everyone wants to come in and try it first.”
“Then they come back and try something else,” Aimee said.
Slices deals are available 11 a.m. to 2 p.m. Monday to Saturday and noon to 4 p.m. Sunday.
The barbecue chicken and Buffalo chicken pizzas are popular as is the linguica one, complete with fried onions and peppers. The latter, which acknowledges Jeremiah's Portuguese roots, also comes in sub form.
Then there’s the Total Package pizza with pepperoni, sausage, ham, bacon, hamburger, onion, peppers, mushrooms and black olives.
“It really has everything,” Aimee said.
Pizza, pasta, and more on the menu
But Pi Theory is more than just pizza, she added.
“We have pasta, sandwiches, salads, subs, stromboli,” she said. “If you’re not in the mood for pizza, get an Italian sub. We’re proud of everything we have.”
Other early favorites include the fried ravioli, garlic knots and meatballs — as a starter, in a sub and with pasta.
“The stromboli too,” she said. “It’s huge. The small is as big as the plate and is easily shareable.”
Desserts are homemade and pies — including Key lime, apple pie, Reese’s peanut butter cup and cheesecake — are ready and waiting.

“There are always at least five pies in-house,” Aimee said. “My husband made a brownie on the bottom, cheesecake in the middle and chocolate chip cookie on top the other day. It sold out within 24 hours.”
Before opening, the Kuslocks did some painting, added a new front counter and recovered the tables. A bar area is in the works, and beer and wine will be available next month.
The baseball and Boston-themed décor runs throughout, especially in the dining room.
“More and more customers are eating in here every day,” Aimee said. “We were even full last night. The feedback has been good. It’s all very positive.”
That's because the Kuslocks make a very good team.
