Olive oil cakes have been hugely popular on TikTok for months, thanks in part to Kylie Jenner posting about one from her local bakery. But olive oil cakes have had staying power due to their simple recipes and delicious taste.
Interested in trying one out for yourself? Recipe developer and content creator Pierce Abernathy has a summery blood orange olive oil cake recipe you've got to try. "Olive oil cake is really having a moment now," Abernathy tells Yahoo Life. "It's a really simple cake that highlights a few really good ingredients." Olive oil pairs well with citrus, he points out, making his blood orange olive oil cake a "decadent" treat.
You need a few simple ingredients to recreate the olive oil cake craze at home.
Blood orange olive oil cake ingredients:
Dry ingredients:
zest of 1 blood orange
Preheat your oven to 325 degrees. Mix your dry ingredients and set aside.
Wet ingredients:
Whisk together your wet ingredients, and then fold in your dry ingredients. Transfer the mixture to a baking pan, and bake for one hour.
Glaze ingredients:
1 tsp amaro nonino or amaro
juice of 1/2 blood orange
Whisk together your glaze ingredients.
When the cake is done, pull it out of the oven and let it cool. "Once it's cool enough to handle, you can glaze away," Abernathy says. Then, simply pour your blood orange glaze on top, let it set and enjoy!
