But, a closer look almost always reveals that the grains are dried out and clumped together-and simply sticking that carton in the microwave to reheat it just doesn't cut it. With a little magic, though-alright, water-you can easily transform that block of dry, clumpy rice into a side that’s every bit as fluffy as it was on day one.

P.S. Never re-use rice that had been left out on the counter for hours. It’s best to put rice in the fridge STAT or you risk getting food poisoning (yikes!). But you knew that already.
Place one cup of rice into a microwave-safe bowl and sprinkle with a tablespoon or two of water. Put a plate on top of the bowl to cover. Microwave on "high" for one and a half to two minutes. Stir to check that rice is evenly heated.
Spread rice out onto a microwave-safe plate, using a fork to break up clumps. Lightly dampen a paper towel and place on top of rice, covering completely. Microwave on "high" for one and a half minutes.
Fact: Day-old rice actually works better in stir-fries, since freshly cooked grains tend to get soggy. Heat oil in a skillet and add rice once the pan gets hot. Cook, stirring to break up any clumps, until it’s warmed all the way through. Then, add in your go-to vegetable and cooked proteins or follow your fave recipe. (Breakfast Fried Rice, anyone?)
