Limepocalypse Over = Daiquiri Time

Good news, folks. The limepocalypse is over. Were you forced to forgo your usual lime rickeys in favor of lemonade, or worse, drink Tom Collinses on Cinco de Mayo? Poor baby.
But don’t worry; NPR reports that better weather and a lime cartel “on the run” south of the border (thanks to a “federal police crackdown in the state and the emergence of civilian militias,” whoa) have put limes back to where they should be, flooding the market.
And your cocktails: Stateside, the price of limes has fallen from almost a buck apiece to $.30 apiece in just the last week. What does this mean for you? Margaritaville. Or, even better, a daiquiri. Rum, lime, sugar, and no room for error: Bar owners use the drink to measure the talent of potential barkeeps for good reason.
Yes, you could put strawberries in it if you’re feeling sweet and like you need a strawberry party. And if you’re having a more complicated, more writerly, more nuanced day, make like Papa Hemingway and add other elements. Cocktail writer Wayne Curtis suggests a Hemingway-esque variation involving maraschino juice, a bit less sugar, and a touch of fresh grapefruit juice.
If you go the simpler, three-ingredient route, there are lots of ways to wet your whistle, so find the mix of sweet, tart, and boozy that suits you best. However you do it, be sure to toast to limes themselves as you’re tipping these back. Because it wouldn’t be a daiquiri without one.

Makes one
2 oz dark rum
1 oz fresh lime juice
1 oz simple syrup (one part sugar, one part water)
Garnish: Lime wheel
Add all the ingredients to a shaker and fill with ice. Shake, and strain into a chilled Martini glass. Garnish with a lime wheel.
