Junk Food Makeover: Blondies

This week, we made over our cherished childhood blondie into an almond butter blondie. Almond butter is high in Vitamin E, which is an important nutrient for skin health. Studies have shown that Vitamin E can protect the skin from oxidation. So, eat a blondie and check out the glow!

Ingredients:

  • 2 large eggs

  • 1 cup coconut sugar

  • ¾ cup almond butter

  • ¼ cup grass fed butter, room temperature

  • 1 teaspoon vanilla extract

  • 1/3 cup coconut flour

  • a pinch of sea salt

  • 1 teaspoon baking soda

  • 1 cup chocolate chips

Yields: 16 bars

Method:

  1. Preheat oven to 350 degrees.

  2. Place eggs, coconut sugar, butter, almond butter and vanilla in a mixer. Cream together at medium speed until light and fluffy.

  3. Mix in coconut flour, sea salt and baking soda.

  4. Add chocolate chips.

  5. Pour into a well greased 9 x 13 baking dish.

  6. Bake for 30 minutes.

  7. Let cool and cut into bars.
